Put the cream in a pan and place on the heat
Cut the vanilla pod in half length ways and add to the cream
Whilst this is coming to the boil whisk together the egg yolks and sugar until they become a pale yellow colour
When the cream begins to boil take off the heat and take out the vanilla pod
Add the cream to the egg mix, whisking continuously
Pour this mix into ramekins (makes 6) and bake in a bain-marie at 140 degrees c for 35 minutes
When finished cooking take out of the water immediately and allow to cool
Refrigerate for 3 hours before serving.
